Feature Presentation: Peanut Chicken Noodle Salad + The Sting (1973)


What we made tonight was based on this recipe,

...with a few modifications:  We used lemon juice instead of lime juice, a different set of vegetables {arugula, carrots, red cabbage, a tiny bit of white onion}, regular sugar instead of brown sugar, chunky peanut butter instead of creamy and no crushed peanuts at the end, we used fettuccine instead of rice noodles, chicken breasts instead of chicken thighs, grilled on a foreman instead of conventional grill, used white wine vinegar instead of rice vinegar, used dried ginger instead of ginger root, used chili powder instead of cayenne pepper, used crushed red peppers instead of chili peppers, and didn't use a food processor (just stirred really fast by hand ;) ).




Voila!

Grilled Portobello With Pesto

We were trying to recreate a sandwich from one of our favorite coffee shops...

We came across this recipe:

..and the rest is history.  It was fantastico!  and easy (we grilled the mushrooms on a foreman grill for convenience).

Next time we'll try marinating them in balsamic vinegar for a twist.  And maybe even make it without the mayo for the health of it.
